Butter Pecan Cookies

Butter Pecan Cookies
Pressed for time? All you need is 10 minutes to prepare, pop ’em in the oven and you’ve got something to wow friends.


1/2 cup softened butter
1 cup light brown sugar
1 teaspoon vanilla
1 egg
3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped pecans


Cream together butter and brown sugar. Add vanilla and egg; beat until light and fluffy.

2  Fold in flour, baking powder, salt, and pecans.

Drop spoonfuls of the cookie mixture on lightly greased baking sheets. Bake at 375°F for about 5 minutes. Cool and serve. The only problem? No leftovers!
