Mango Cake

1 230 grams box oven toaster banana cake mix
150 chopped ripe mangoes

Mango puree topping
150 g ripe mango
½ cup sugar
1 tbsp fresh lemon juice
pinch of salt
4 egg yolks
¼ cup unsalted butter, cut into small pieces
1 cup whipped cream, chilled

Prepare one box oven toaster banana cake mix according to package direction. Substitute mango for banana in the ingredients and use four ensaymada molders instead of a loaf pan. Bake as per package direction two molders at a time. Set it aside. Prepare toppings, blend the first four ingredients. Add the yolks and puree for 15 seconds longer. Cook puree until smooth and thickened. Whisk in butter one piece at a time. Let it cool. Mix in the chilled whipped cream. Use it as icing for mango cake. Decorate as desired.
